Break-job Burritos
I make breakfast almost every morning for my husband and 2 other men. These guys work in an auto shop, so there are big appetites all around. Today was a cook "What U Got" day. In my house, there are a lot of these and I have become quite clever at mixing it up. Todays ingredients made 5 regular sized (6"x2") breakfast burritos.
BREAK-JOB BURRITOS
5 flour tortillas
4 eggs scrambled in bowl w/ tbs milk and salt to taste
10 slices Shaved deli Turkey lunch meat-cut with scissors into tiny pieces
1 cup frozed hashbrowns
This is what I did: Heat pan, add 1 tbsp oil. When it's all nice and hot, add the frozen potatoes (I had chunky tatoes, but you can use shredded or broken french fries, or even fresh chopped--easy, please!) and cook until crisp, add 1 tbsp bacon grease (this is the secret weapon used to make turkey taste like ham, I had no ham, so I used turkey). When the grease is clear and hot, add the turkey shreds to the potatoes. Stir a few times and then dump in your eggs. Add what you like here, salt, pepper, paprika, parsley, sage...(What U Got?) Lower heat and scramble it up. When eggs are set, move the pan off of the heat and cover to keep warm. Turn the burner OFF. Set your tortillas on the still hot burner. Flip the tortilla stack with a spatula and set your warm tortilla on a plate, fill it with 1/5 filling, top with cheese and roll. Flip the tortilla stack again, and repeat until all 5 are finished.
